When you step into this traditional West Village shop, the scent of freshly roasting beans fills the air. Open bags of dark-brown beans are stacked on the shelves along with jars of sugar as well as coffee-making equipment and tea accessories.

Porto Rico, originally opened in 1907 by Italian immigrant Patsy Albonese. Greenwich Village at the time was witnessing an influx of Italian immigrants, who opened businesses in order to meet their food needs. Peter Longo, the current president and owner of the business was raised on the top 10 coffee beans floor of the bakery of his family located on Bleecker Street where his father was the owner of Porto Rico. The owner continues to run the business in the same way like his father and grandfather.

Sey Coffee

It is located on Grattan Street in Morgantown, Brooklyn's Bushwick neighborhood, Sey Coffee is both a coffee shop and roaster. Tobin Polk, Lance Schnorenberg and their 33-year-old co-founders began roasting coffee in a loft on the fourth floor just across the street, in 2011. They named it Lofted Coffee. Local clients included Greenpoint's Budin and Soho cart services Peddler and Peddler.

Sey's focus on purchasing micro-lots, or even whole harvests from a single farmer has earned it the acclaim of highly discerning New York City coffee aficionados. Last year they made a six-bag micro-lot purchase of Danilo Dones Sitio Catucai 785 from Brazil's Espirito Santo region. The beans were carefully picked at the peak of ripeness, then removed by flotation to eliminate defects, then dry fermented for 36 hours prior to being dried on the farm. The result is a blend with hints of berry, melon and lemongrass.

Sey's dedication extends beyond its shop to improve the overall well-being of growers and staff, as well as its customers. It uses biodegradable disposables and composts to keep waste out of landfills and converting it to agents that lower harmful greenhouse gases and nourish soil. It also removes gratuities. This lets baristas focus on their craft and to earn a living.

La Cabra

La Cabra, a modern specialty-luxury coffee beans company, was founded in Aarhus in Denmark in 2012. They started with a small store and a team of dedicated employees. The shop employs a La Marzocco modbar and the cups and plates are made by Wurtz ceramics in Horsens, the son and father studio. In a recent interview with Atlanta Coffee Shops, General Manager Ian Walla reveals that La Cabra serves approximately 250 different types of coffees each year, and usually has seven or eight coffees available at any given moment.

The Roasting Plant Coffee

The Roasting Plant, a multi-unit coffee retailer, roasts and brews its coffee on the spot. Each cup is brewed and roasted according to your specifications in less than an hour. It searches the world for the finest specialty beans that are directly sourced to give customers the option of choice and quality.

Their on-site roaster utilizes fluid bed technology that is a bit different to traditional drum-type machines found in most UK coffee shops. The beans are blown around in a heated box by high-velocity air, which keeps the green beans suspended and allows roasting to happen at a consistent rate throughout the machine.

I tried the Sumatran Coffee and it was velvety and rich with a smooth taste. Dark chocolate was evident from the aroma. And as you sip the coffee you could smell subtle citrus fruit flavours.

The roasted coffee is then transported to the store's Eversys super-automatic brewing machines and the coffee is brewed according to your preferences in under a minute. Customers can pick from a selection of nine single origin choices and a variety of blends.

Parlor Coffee

Parlor Coffee was founded in 2012 behind a barbershop, with a single espresso machine. It has since developed into a burgeoning coffee roastery, with beans that are sold in top cafes as well as restaurants and home brewers all over the city. Parlor Coffee is committed to sourcing the highest-quality beans, that have all been through a long journey before they reach its roasters.

The owners, who are self-described as "passionate about coffee and believe that good coffee should be accessible to all," have created a place that is a bit more grounded with chalkboards, compost bins, up-cycled handmade items, and simple decor.

However, they also hold cuppings on Sundays that are accessible to the public. Think of it like an artisanal tasting room in which you can smell and taste the ground beans, from chocolaty to earthy (one was almost tomato-like!). They're a bit off the beaten track, but well worth a trip.
